Soft flaky and fluffy, Doughboy’s Sourdough Shokupan Milk Bread is the perfect compliment to any meal, but you will definitely catch yourself snacking on a slice. But that’s perfectly OK—Shokupan means “eating bread” because this bread is a meal all on its own!
Tangzhong (similar to Yudane) is a process by cooking a portion of the flour prior to mixing with the full batch. This helps with texture as well as longevity of the bread.
It is not necessary, but we believe this extra step is important for our custies! We want you to enjoy the breads at your own pace, and the SOURDOUGH and TANGZHONG together, really help extend the life of our Shokupan.
